GINGER PEANUT PASTA SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Brunson Estate in Midlothian, Texas in 1990.
Ingredients:
8 ounces corkscrew pasta
20 fresh pea pods with tips and stems removed
1 small cucumber quartered lengthwise and sliced
2 medium carrots cut into long thin strips
1 medium yellow pepper cut into thin strips
3/4 cup thinly sliced radishes
1/2 cup bias sliced green onions
3 tablespoons snipped fresh cilantro
1/3 cup chopped peanuts
dressing
1/4 cup salad oil
3 tablespoons rice vinegar
2 tablespoons granulated sugar
2 tablespoons soy sauce
1 teaspoon grated ginger root
1/8 teaspoon hot pepper sauce
Directions:
1. Cook pasta according to package directions then during last 30 seconds add pea pods.
2. Rinse with cold water and drain then combine pasta and vegetables.
3. Combine dressing ingredients in a jar then cover and shake well.
4. Toss salad with dressing and sprinkle with peanuts then serve.
