Ingredients:
1 1/4 cups low-fat honey graham cracker crumbs (9 sheets)
1/4 cup light butter, melted
2 tablespoons minced crystallized ginger
2 tablespoons granulated sugar
cooking spray
3 large eggs, lightly beaten
3/4 cup granulated sugar
2 teaspoons grated lime rind
1/3 cup fresh lime juice
3 tablespoons all-purpose flour
2 teaspoons grated peeled fresh ginger
1/2 teaspoon baking powder
1/8 teaspoon salt
2 teaspoons powdered sugar
Directions:
1. Preheat oven to 350°.
2. Combine first 4 ingredients in a mixing bowl; mix well. Press into an 8-inch square baking pan coated with cooking spray.
3. Bake at 350° for 12 minutes; cool slightly on a wire rack.
4. Whisk together eggs and next 7 ingredients until smooth. Pour egg mixture over prepared crust. Bake at 350° for 20 to 22 minutes or until set. Cool completely on wire rack. Sift powdered sugar evenly over top. Cut into bars.
