Ginger Glazed Salmon

Ingredients:
4 (6 ounce) salmon fillets (about 1 inch thick)
cooking spray
1/2 cup pineapple preserves
1 1/2 tablespoons lime juice
1 tablespoon dijon mustard
1 1/2 teaspoons bottled ground fresh ginger (such as spice world)
1 teaspoon bottled minced garlic
1 teaspoon low sodium soy sauce
1/4 teaspoon salt
1/4 teaspoon black pepper
Directions:
1. Preheat oven to 425°.
2. Place fillets in a 13 x 9-inch baking dish coated with cooking spray. Combine preserves and remaining ingredients; pour over fillets.
3. Bake at 425° for 15 minutes or until fish flakes easily when tested with a fork.
