First tried this when I came to NZ, has been a fav ever since.
Ingredients:
4 ounces butter
4 ounces sugar
7 ounces flour
1 teaspoon ground ginger
1 teaspoon baking powder
2 tablespoons butter
4 tablespoons icing sugar
2 teaspoons golden syrup
1 teaspoon ground ginger
Directions:
1. Cream butter and sugar.
2. Add sifted dry ingredients.
3. Mix well and press into a greased shallow tin ( 28cm x 18cm slice pan).
4. Bake 20-25 minutes at 375F degrees.
5. -Topping-.
6. Put all ingredients into a saucepan.
7. Heat until melted.
8. Then pour over cake when hot.
9. Cut into squares before it gets cold.
10. May double topping if desired.
