I just love these ginger cream cookies - They're so yummy!
Ingredients:
1/2 cup sugar
1/2 cup water
1/2 cup molasses
1/3 cup shortening
1 egg
2 cups all-purpose flour* or whole wheat flour
1 teaspoon ground ginger
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon ground cinnamon
*if using self-rising flour, omit salt and baking soda.
Directions:
1. Mix sugar, water, molasses, shortening and egg.
2. Stir in remaining ingredients.
3. Cover; refrigerate 1 hour.
4. Heat oven to 400 degrees.
5. Drop dough by teaspoonfuls 2 inches apart onto ungreased
6. cookie sheet.
7. Bake until almost no indentation remains when touched, about 8 minutes.
8. Immediately remove from cookie sheet; cool.
9. Makes about 4 dozen cookies.
