Ginger Chicken or Tofu Salad

Ingredients:
2 cups chopped cooked chicken breasts or 2 cups firm tofu
1/4 cup chopped red onion
1/2 stalk celery
1 teaspoon sunflower seeds
1/4 teaspoon finely minced fresh ginger
1 1/2 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
romaine lettuce
Directions:
1. Toss all the ingredients together until fully coated with olive oil and lemon juice. Serve on a bed of romaine lettuce.
