Ginger Chicken and Mushrooms with Broccoli
Ingredients:
3 tsp canola oil
6 oz chicken breast raw, chopped
1 tbsp minced ginger root
1/4 c diced shallots
1 tsp garlic powder
1 bunch broccoli, separate florets and slice stems 1/4
1 sweet red pepper, cut into 1 pieces
10 oz mushrooms, sliced
Directions:
1. rinse broccoli; microwave on high, covered for 3 minutes; drain
2. heat 2 tsp oil; add ginger, scallions, garlic and chicken, stir til chicken browns, remove from pan
3. heat 1 tsp oil, add red peppers, stir 2 minutes
4. add mushrooms and broccoli, stir 2 minutes
5. add chicken, toss to heat through
