Ingredients:
2 cups flour
3 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon ginger
1/2 teaspoon salt
1 egg, well beaten
1/2 cup milk
1/2 cup molasses
4 tablespoons butter, melted
3/4 cup grated cheddar cheese
Directions:
1. Preheat oven to 425 degrees.
2. Sift together dry ingredients.
3. Combine egg, milk, and molasses.
4. Add to dry ingredients, stirring constantly.
5. Beat until just barely smooth.
6. Add butter and stir in cheese.
7. Fill muffin pans 2/3 full.
8. Bake for 10 to 15 minutes.
