Ginger Carrot Pork Lettuce Wraps

These are too good for words.
Ingredients:
about a pound of ground pork (not ground sausage).
2 inch chunk of ginger
garlic cloves, to your preference.
salt and pepper
3 carrots, peeled.
2 tbs light soy sauce
large green leaf lettuce leaves.
Directions:
1. Mince garlic and ginger.
2. Place pork in fry pan with ginger and garlic and cook until browned, adding salt and pepper to taste.
3. Drain fat from pan. I usually then heavilly line a collander with paper towel and dump the meat in there to really drain, and press with more paper towel on top to get rid of as much grease as possible.
4. Finely grate carrots.
5. Combine pork, carrots and soy sauce in bowl. Season to taste with salt and pepper.
6. Take a lettuce leaf and put about 2-3 tablespoons of meat mixture in the middle. Wrap and enjoy!
