It came to me in a dream and I made these the very next afternoon. :)
Ingredients:
1 cup plus 2 tbsp. flour
1 tsp. baking powder
1/4 tsp. salt
11/2 tsp. ginger
3/4 cup brown sugar
1/3 cup butter, softened
1/2 tsp. vanilla
1 large egg
Directions:
1. Preheat oven to 350F. Grease a 9-inch square baking pan.
2. Combine flour, baking powder, salt, and ginger; set aside.
3. Beat brown sugar, butter, and vanilla until creamy. Beat in egg. Gradually add flour mixture. Spread into prepared pan.
4. Bake at 350F for 20-25 minutes. Cool completely in pan on wire rack. Cut into bars. Makes about 16 bars
