Ingredients:
1 1/2 cups chopped onions
2 -3 tablespoons finely chopped fresh ginger
3 -4 garlic cloves, minced
4 (15 ounce) cans great northern beans, rinsed and drained
1/2 cup packed light brown sugar
1 (6 ounce) can tomato sauce
1/2 cup light molasses
1 teaspoon dry mustard
1 teaspoon ground ginger
1 teaspoon dried thyme
1/2 teaspoon ground cinnamon
1/2 teaspoon allspice
2 bay leaves
pepper
1/2 cup coarsely ground gingersnap crumbs
Directions:
1. Combine all ingredients except pepper and gingersnap crumbs in slow cooker. Season to taste with pepper.
2. Cover and cook on low until thickened to desired consistency, about 6 hours, mixing in gingersnap crumbs during last hour.
3. Discard bay leaves before serving.
