My mom, Gina, has been making this for as long as I can remember. We eat it straight out of the oven without icing. Yes, it is that good.
Ingredients:
3/4 cup shortening
2 cups sugar
2 eggs
3 cups flour, minus 2 tablespoons and sifted
1 teaspoon baking powder
2 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon clove
1 teaspoon nutmeg
2 teaspoons cinnamon
2 cups applesauce
1 cup golden raisin
1 1/2 cups dates
2 cups pecans, chopped
Directions:
1. Preheat oven to 350 degrees.
2. In a bowl cream shortening and sugar. Beat in eggs one at a time.
3. In a seperate bowl sift together flour, baking powder, baking soda, salt, cloves, nutmeg, and cinnamon.
4. Add applesauce to creamed mixture alternating with dry ingredients, beating after each addition. (Dry, beat, applesauce, beat, dry, beat, applesauce, beat, etc.).
5. Stir in raisins, dates, and pecans.
6. Bake in a greased and floured bundt pan for 90 minutes, or until brown and done all the way through.
