Gf Baked Blackberry Chicken

A delicious and easy recipe that has a slight oriental twist to it. Serve with rice with lime, green onions and cilantro and some steamed green beans and you'll have a healthy dinner everyone will love. Free of wheat, dairy, nuts and eggs.
Ingredients:
1 1/2 lbs chicken thighs
1 cup blackberry jam
2 teaspoons ginger
2 garlic cloves, minced
2 tablespoons rice vinegar
2 tablespoons gluten-free soy sauce
Directions:
1. Mix everything except the chicken until lumps are gone and it forms a smooth sauce.
2. Marinate chicken in blackberry sauce overnight.
3. Discard marinade.
4. Bake in a 350 oven for 40 minutes.
5. Grill under the broiler to crisp the skin for about 3-4 minutes.
