Gerry's Zucchni Soup

A low fat hearty soup
Ingredients:
2 large onions (chopped)
4 garlic cloves (minced)
1 1/2 teaspoons salt
1 teaspoon pepper
1 tablespoon olive oil
6 medium zucchini (chopped roughly)
2 large potatoes (chopped)
1 1/2 tablespoons white wine vinegar
8 cups broth (chicken or vegetable)
parmesan cheese, to serve (optional)
Directions:
1. Saute onions and garlic in olive oil until transparent.
2. Add remaining ingredients bring to a boil.
3. Simmer for 30 minutes or until potatoes and zucchni are soft.
4. Puree in a blender or use a hand blender.
5. Season to your taste
6. Serve with Parmesan Cheese (optional).
