Classic german style hot pot soup extra yummy on cold and rainy days. serve this with a green salad and some crusty warm bread... (probably good with black bread, if you like that sort of thing)
Ingredients:
1-2 lbs sausage (kielbasa or bratwurst types)
1 large onion diced
2 large carrots diced
3-4 celery ribs sliced
1 large turnip diced
1 lb tomatoes concasse ( or 1 can diced tomatoes)
1 tsp dry thyme
1 tsp dry basil
1/2 lb mushrooms sliced(optional)
1 bu spinach chopped (optional)
1-2 leaves of bay laurel
1 c dry split peas
1 c pearl barley
s&p to taste
Directions:
1. In a large heavy bottom pot, simmer peas until tender about 1 hour.
2. if raw, cook sausage until slightly browned, (precook covered with a little water and cook until water evaporates and then turn occasionally until browned),
3. take cooked or kielbasa type sausage and slice into 1/4 to 1/2 inch slices
4. saute sausage slicesuntil cut sides startto brown,
5. add onions keep sauteing,
6. add celery and carrot and keep sauteing.
7. put all ingredients except salt and pepper into pot of soft peas.
8. add enough water so that it seems to be slightly too much, but not so much that its going to be watery after everything cooks.. better to add more water later than too much to start...
9. simmer until the barley is well cooked, adding water as needed ( must be thick, but still qualify as soup ) go about a 1/2 cup at a time...
10. S&P to taste..
11. ENJOY!!!
