A little different from your traditional potato salad, none the less it is yummy. Good salad for those who arent crazy about mayo, like my aunt in law who gave me the recipe. Enjoy! (I think I am way off on the servings, i had to put something)
Ingredients:
5 lb bad of red potatoes (never realized these make a difference, they’re not as dry)
6 eggs
1 lb of bacon (i usually use 1 and 1/2 lb )
chop up some onion, celery and carrots if you’d like (i just grated some on top)
1 container of sour cream (the taller one...is it 8oz or 16oz )
1-2 tablespoons of mayonaise, also to taste, if you like more or less
salt and pepper to taste
Directions:
1. Cook and peel potatoes
2. Boil eggs and cut up into chucks
3. Fry bacon extra crispy and crunch up in a paper towel into bits
4. Combine the above in bowl
5. Mix up sour cream and mayonaise separately and add to to the potatoes, gently mix so as to not mush up the potatoes.
6. Wala, enjoy!
