German Potato Salad

This is an old time German family favourite and I love this version of Potato Salad because it's so different then many I have tried. Make sure that only baby potatoes are used and that they are boiled in their skins first till almost fork tender, then peeled when slightly cooled and then sliced. Depending on amount to be served, about 25 small potatoes is a good serving for approx 6-8 people.
Ingredients:
25 baby potatoes
8 ounces lean kielbasa or 8 ounces polish sausage, skinned
1 large sweet onion, diced
6 -8 no garlic dill pickles, diced
1 dash of salt and a good few shakes pepper
1 teaspoon dried parsley
3/4 cup white vinegar
3 tablespoons white sugar
2 cups helmanns mayonnaise
Directions:
1. 1. Boil potatoes in water till almost fork tender. Meanwhile, dice sausage, onion and dill pickles and place in a large enough bowl to mix well.
2. 2. Drain potatoes and allow to cool for few minutes before peeling.
3. 3. While potatoes are cooling, combine the vinegar and sugar in a shaker to blend well allowing sugar to dissolve.
4. 4. Gently peel skins away from the potatoes. Once you have them all peeled, you may then start to slice them into the bowl with the sausage, onion and pickles. Do not slice too thinly or they will fall apart.
5. 5. Once all potatoes are sliced, add sprinkle of salt and dash of pepper along with parsley then pour vinegar/sugar mix over everything. Fold lightly with a very large spoon to blend flavours.
6. 6. Add mayo to salad mix and fold carefully making sure that all the mayo coats everything well.
7. 7. Cover and place in fridge till one hour before serving - and enjoy! :).
