This was one of my favorites breakfasts growing up. It isn't sweet in itself (no sugar), so you can sweeten to taste with syrup, jam, fruit, or a dusting of powdered sugar-whatever you like. It's very good, so don't be surprised if everyone wants seconds or even thirds! Ingredients:
3 eggs |
1/2 cup low-fat milk |
1/2 cup flour |
1 pinch salt |
2 tablespoons butter, melted |
syrup (optional) or butter (optional) or powdered sugar (optional) or fruit (optional) or cooked sausage (optional) or jam (optional) |
Directions:
1. Preheat oven to 450* F. Spray a glass pie plate with nonstick spray and rub it with a paper towel to coat well. Spray and rub a second time (this makes it release much better). 2. Beat the eggs in a batter bowl. 3. In a small bowl, combine flour and salt; add to eggs in 4 additions, mixing well after each. 4. Add milk in 2 additions, stirring after each. 5. Note: don't beat too hard or use a whisk-too much beating or incorporating too much air will prevent it turning out well. 6. Stir in butter; pour into pie plate. 7. Place in center of oven and bake at 450* F for 10 minutes. 8. Turn temperature down to 350* F and bake an additional 20 minutes. 9. Remove from oven; cut into wedges and serve hot with desired accompaniments. |
