When this thing begins to grow up the sides of your skillet in the oven, don't freak. It's suppose to do that. It bakes from the center out. When done properly it will look like a giant pancake bowl. Of course you can accessorize with anything you want. Read more . Berries, Maple syrup, what ever. However traditionally speaking it's only served with a sprinkling of lemon juice and powdered sugar. Trust me, I will be surprised if you can eat the whole thing by yourself. Plan on sharing with at lest one other person.
Ingredients:
3 large eggs
1/2 tsp salt
3 tbls sugar
1 c warmed milk
1 tsp vanilla extract
2 tbls unsalted butter, melted
1 c a/p flour
2 tsp shortening
powdered sugar
1 lemon
Directions:
1. Preheat oven to 425
2. In a medium bowl, whisk together the eggs, salt, sugar, milk vanilla and butter. Whisk in the flour to male a smooth batter. Set aside.
3. Heat a well-seasoned 10 cast-iron skillet in the oven for about 10 minutes. Remove and brush the inside with the shortening. Pour in your batter. bake for 15 minutes.
4. Lower the oven temp to 350. and continue baking until puffed and golden brown. ( about 13 to 15 minutes more.) Run a knife around the edge of the skillet and slide onto a plate. Squeeze the juice of a lemon 1/4 onto the pancake and sift on the powdered sugar.
