German Cucumber Salad

This is a typical side dish in the Bavaria region. Moving to the Hessen region I have impressed my neighbor by sering this dish. It is light and accents any meal. There are hundreds of variations with and without cream. Read more . The same basic flavors are used to create delcious and entising varieties.
Ingredients:
2 large english cucumber (over 12 inches in length and 2 inch radius)
salt and pepper to taste
2 tbs fresh (dried is okay too) chopped parsely
2 cups cream (regular whipping cream, no sugar please)
Directions:
1. Peel and hinly slice cucumbers. (4 mm thick)
2. Place in medium sized serving bowl.
3. Salt and set aside. Let rest 30 minutes.
4. Drain all excess water.
5. Pour in cream.
6. Add parsley andsalt and pepper to taste.
7. Serve chilled not cold.
