Got this from a dear old family friend who was just the best cook! Layers of buttery cake, cinnamon sugar and apples make this my family's favorite. ..and everyone else's, too! Thanks for sharing, Peg.
Ingredients:
2 teaspoons cinnamon
5 tablespoons sugar
4 cups apples, peeled, sliced
3 cups flour
1 cup vegetable oil
4 large eggs
2 1/2 teaspoons vanilla
2 1/2 cups sugar
1/2 cup orange juice
1 tablespoon baking powder
1/2 teaspoon salt
Directions:
1. Preheat oven to 350.
2. First, mix cinnamon and 5 tablespoons of sugar together and set aside.
3. Mix cake ingredients for 4 minutes using mixer. Grease and flour bundt or tube pan. Pour a layer of batter, then a layer of apples - sprinkle with cinnamon and sugar mixture. Alternate layers, ending with a layer of batter 2 more times.
4. Bake for 1 1/2 hours.
5. NOTE: I use peaches instead of apples sometimes! If you do, make sure they're not overripe or they'll be too wet for the cake. Equally delicious!
6. NOTE: I use a charlotte pan - it is a little larger than a regular bundt pan and makes a beautiful presentation.
