This is my Grandmama's recipe. I feel close to her when I make it, I sure do miss her! It sure is good! I serve it in pieces dabbed with sweetened whipped cream just like she did!
Ingredients:
1 (9-inch) unbaked pie shell
1/2 cup sugar
1 cup light karo corn syrup
1 tablespoon butter
3 whole eggs
1 teaspoon vanilla
1/8 teaspoon salt, if desired
1 cup pecan halves
Directions:
1. Combine the sugar, corn syrup and butter in a heavy saucepan and heat just enough for the butter to melt and the sugar to dissolve.
2. Cool.
3. Beat in eggs, add vanilla and salt if desired.
4. Spread pecans over bottom of unbaked pie shell.
5. Pour filling over them.
6. Bake at 375 degrees for about 10 minutes, then turn temperature down to 325 degrees and baking for another 35 - 40 minutes -
7. Watch closely, you might need to cover the outside edges with aluminum foil if they're browning too quickly.
