Another hearty bowl of oatmeal, but this one uses some of Georgia's finest. Fresh peaches and toasted pecans add great flavor and depth to this comforting breakfast favorite.
Ingredients:
1 cup steel cut oats
2t butter
1 cup half and half or milk
1 1/2 cups peach or peach blend 100% juice(i used a peach/raspberry)
1 1/2 cups water
1-3t honey or raw or brown sugar(to taste)
1t vanilla
1/4t fresh grated nutmeg
2 medium fresh peaches, pitted and diced(i don't peel)
1/4 cup lightly toasted pecans(or can sub another nut like maybe, almonds
dash of salt
Directions:
1. Melt butter in medium, heavy saucepan. Careful not to burn.
2. When just melted, add oats and stir to coat them with the butter.
3. Let cook about 1-2 minutes, stirring often.
4. Add juices and water and stir.
5. Increase temp to bring to a boil, then immediately reduce heat and simmer, uncovered and unstirred, about 20-25 minutes.
6. Stir well and add peaches, honey, vanilla, nutmeg, pecans, salt and half of the half and half.
7. Continue to cook on low, stirring often, for about 7 minutes. Add half and half or milk as needed to reach desired consistency.
8. You can add pinch bowls of sugar or lil pitchers or warmed cream and honey to the table, if desired, so everyone can add, as desired.
9. ****PLEASE NOTE: ALWAYS CHECK YOUR OATS PACKAGING FOR LIQUID:OATS RATIO AND ADJUST, ACCORDINGLY. NOT ALL BRANDS ARE THE SAME :)
