George Washington Carver's Dandelion Salad (1942)

Adapted from the bulletin, Nature's Garden for Peace and Victory, February 14, 1942. Be sure to use only young, tender leaves that have not been treated with pesticide.
Ingredients:
2 cups finely shredded dandelion greens
1 medium onion, finely chopped
2 small radishes, finely chopped
1 tablespoon minced parsley
1 tablespoon sugar (optional)
salt
pepper
vinaigrette (or mayonnaise)
hard-boiled egg, sliced, for garnish
pickled beet, for garnish
Directions:
1. Mix the dandelion, onion, radishes, parsley, sugar, salt and pepper.
2. Add vinaigrette and toss to mix.
3. Garnish with slices of egg and/or beets.
