Beans don't need to be served with a meat because they count as a meat so add some cornbread and mashed potatoes and you have a meal. I like mine better the next day with cornbread and a big chunk of onion or a big slice of home grown tomato. Read more .We also like home grown, radishes, cucumbers or green onions but if there are none in season we love my Garlic Cole Slaw as a side.
Ingredients:
16 oz. bag of pinto beans
a chunk of fat back, salt pork or bacon, about 3 oz. or 2 tbs. bacon grease
water
salt to taste
Directions:
1. Pour about 1/4 of the bag of the beans out onto the litchen table. Look at them very carefully and pick out anything that is not a bean or any broken beans.
2. Repeat until you have done this with the whole bag.
3. Rinse the beans well with warm water.
4. Put the beans in a large pot and cover with enough water that there is about 3 inches above the beans.
5. Cook on high and bring to a boil for about 10 minutes.
6. Pour off this water and repeat step number 4. Bring the beans back to a full rolling boil ,add the meat.
7. Lower the temperature to medium high and let them cook for about 4-5 hours or until they are very tender.
8. Keep a good watch on them and try to keep the same amount of water by adding COLD water to the pot every once in a while.
