My friend vicky sent me this recipe. I think you will like it on a hot summer day. Something cool and filling.
Ingredients:
2 cucumbers, diced
3 large tomatoes, diced
1 red pepper, chopped
1 green pepper, chopped
1 red onion, chopped
3 garlic cloves, minced
1/4 cup red wine vinegar
2 1/2 cups tomato juice
salt
pepper
1/4 cup fresh parsley, chopped
1/4 cup fresh basil, chopped
juice of 1 lime
tabasco
Directions:
1. In large glass bowl combine vegetables
2. . Add remaining ingredients and mix well.
3. Add half the mixture to a food processor and blend until smooth
4. . Combine puree with original mixture.
5. Chill for 4 hours and serve.
