The best summer soup ever.
Ingredients:
4 cups tomato juice
1/2 cup finely chopped onion
1 clove garlic, minced
1 medium bell pepper, minced
2 teaspoons honey (optional)
1 medium cucumber, peeled seeded and minced
2 scallions, minced
1/2 lemon, juice of
1 lime, juice of
2 tablespoons red wine vinegar
1 tablespoon finely chopped basil
1 tablespoon finely chopped tarragon
1/4-1/2 teaspoon cumin
1/4 cup minced fresh parsley
2 -3 tablespoons olive oil
salt, to taste
pepper, to taste
cayenne, to taste
2 cups diced fresh tomatoes
Directions:
1. Combine all ingredients in a large pot.
2. Refrigerate til ready to serve.
