This refreshing chilled soup originates from Spain and is easy to make. It's also good for all three Phases of the South Beach Diet. I love cold soups in the summer, and I really like this because it's NOT pureed. Read more . I like to have something to chew... This is SUPER EASY too.
Ingredients:
2 1/2 cups tomato or vegetable juice cocktail
1 cup peeled, seeded, finely chopped fresh tomatoes
1/2 cup finely chopped celery
1/2 cup finely chopped cucumber
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped green onion
3 tablespoons white-wine vinegar
2 tablespoons extra-virgin olive oil
1 large clove garlic, minced
2 teaspoons finely chopped, fresh flat-leaf parsley
1/2 teaspoon salt
1/2 teaspoon worcestershire sauce
1/2 teaspoon freshly ground black pepper
Directions:
1. Combine all the ingredients in a large glass or stainless steel bowl. Cover and refrigerate overnight. Serve cold.
