This gazpacho has a thick sauce by pureeing half the ingredients. Serves 2 as main course or 4-8 as a side dish.
Ingredients:
5 tomatoes
1 red pepper
1 yellow pepper
1 zucchini, small
1 cucumber
4 green onions
parsley, to taste
1 clove garlic
cayenne, to taste (1/8 to 1/4 tsp.)
sea salt, to taste
1 tbs lemon or lime juice
Directions:
1. Blend together ONLY half of all ingredients in high-speed blender.
2. Chop or slice the other half.
3. Stir all together with “sauce.”
