The Detroit area is home to a lot of Middle Eastern immigrants, and we have some fantastic Middle Eastern restaurants. I'd never cared for hummus until I tasted some really good stuff at a local restaurant! I set about to create my own version, and I think I came pretty close! Read more ! The raw garlic gives it a lot of zip, so you might try substituting roasted garlic for a mellower flavor.
Ingredients:
3-4 cloves of garlic
1 (19 ounce) can garbanzo beans, half the liquid reserved (if you can only find a 15 oz can, that’s fine)
4 tablespoons lemon juice
2 tablespoons tahini
1 teaspoon salt
black pepper to taste
1 tablespoon olive oil
Directions:
1. In a food processor, chop the garlic.
2. Add all other ingredients (except reserved liquid) into food processor and blend until creamy and well mixed.
3. Add reserved liquid at this point to achieve desired consistency.
4. Serve immediately or refrigerate for an hour or more for flavors to fully develop.
