Garlic Spinach For Pork Quesadillas

Roy's Feasts from Hawaii by Roy Yamaguchi. This is the Spinach used in the Pork Quesadilla Recipe on my page.
Ingredients:
2 tbs olive oil
1 tsp fresh minced garlic
1 lb spinach leaves
2 tbs unsalted butter
salt and freshly ground pepper
Directions:
1. Heat the oil in a large saute an and when very hot, saute garlic for 5 seconds.
2. Add spinach and stir for 1 minute over medium-high heat, until it is wilted and just barely cooked.
3. Swirl with butter and season with salt and pepper.
4. Remove from heat and drain off the excess liquid.
