Garlic Soup (Sopa De Ajo)

This is a typical Spanish soup, I got it from a spanish magazine while waiting at the Denstist here in Spain (I live across the border in Portugal). Its fast and easy to prepare and taste wonderful, at least I think so..lololol.
Ingredients:
1/2 cup olive oil
3 tablespoons garlic, minced (you may add more if wished)
3 cups cubed day old bread
1 tablespoon salt (or to your own taste)
1 teaspoon paprika
1/8 teaspoon cayenne pepper
2 eggs
1 -2 tablespoon of chopped parsley
Directions:
1. In a pot pour the oil and heat over medium heat. Once hot add in garlic for about 2.3 minutes, then the bread cubes, cook til golden brown, stirring occasionally.
2. Add salt, paprika, cayenne pepper and 6 cups of water, bring to a boil, then reduce to low heat, cover and let simmer for 30 minutes.
3. In a small bowl beat eggs, stir in the parsley, rapidly stir into bread mixture,.
4. stirring constantly, til eggs are just set.
5. Serve in soup bowls you may garnish with a little fresh chopped parsley if wished.
