Garlic Roast Potatoes

The slow cooked garlic in this recipe turns out really sweet and mellow.
Ingredients:
8 tablespoons light olive oil
3 lbs potatoes, peeled and cut into large chunks
3 bay leaves
1 head garlic, cloves separated and flattened with the back of a knife
Directions:
1. Heat the oil in a large roasting tin in an oven set to 350°F.
2. Boil the potatoes and bay leaves in a pan of lightly salted water then simmer for 10 mins until tender.
3. Drain the potatoes in a colander, shaking them around in order to fluff up the outsides.
4. Tip the potatoes into the hot oil, add the garlic cloves and roast in the oven for 1 hour 20 minutes.
