Garlic Rice

This rice is the traditional way to make rice in Brazil. A great way to add flavor to rice to be served with anything!
Ingredients:
2 cups uncooked med grain rice. (no instant)
3 or 4 cloves of garlic.
1 tablespoon of canola oil.
salt to taste
water
Directions:
1. Wash the rice and let it drain to remove as much water as possible.
2. While the rice is draining finely chop the garlic.
3. In a sauce pan, preferably with a heavy bottom, heat the oil over medium heat.
4. Add the garlic and sauté until the garlic is tender. Do not let the garlic brown or burn.
5. Add the rice to the oil and garlic and stir until all of the rice is coated with the oil garlic mixture.
6. Add hot water until the water is approximately 1 inch above the rice.
7. Stir in approximately 1 tsp of salt, or to your taste.
8. Cover and reduce the heat to low.
9. After 20 minutes, take a spoon or a rice paddle and run it around the outside of the rice and gently lift the rice to fluff it. Do not stir.
10. Replace the cover and turn off the heat and let the rice stand for another 5 minutes.
11. Serve with your favorite meal!
