Ingredients:
20 large prawns
1/4 cup olive oil
3 oz butter
1/2 red chili pepper, finely chopped
10 garlic cloves, crushed
1/4 cup white wine
3 tbsp parsley, chopped
1 salt and pepper to taste
Directions:
1. Peel and devein the prawns, leaving the tails intact if you like. Put the olive oil in a large frying pan and add the butter, chili pepper and half the garlic. Cook, stirring, for 3 minutes. Add the prawns and sprinkle with the remaining garlic.
2. Cook for 3 minutes or until the prawns are pink. Turn the prawns, add the wine and cook for another 4 minutes. Add the parsley, season well with salt and pepper and serve with bread or pasta.
