Garlic Mashed Potatoes With Romano Cheese

This dish is a tasty spin on regular garlic mashed potatoes. Goes great with beef, chicken and heartier fish dishes. You don't need gravy to accompany it. Yummy
Ingredients:
5 pounds unpeeled red skin potatoes, quartered
6-7 cloves peeled garlic
2 sticks unsalted butter, softened
5-6 ounces romano cheese, grated
2 teaspoons salt
ground pepper to taste
2 1/2 teaspoons dried oregano
2 teaspoons dried parsley
Directions:
1. Bring a large pot of salted water to a boil. Add potatoes and garlic, cook until fork tender, about 45 minutes, drain. Stir in butter, cheese, salt, pepper, oregano and parsley. Mash with potato masher or electric mixer.
