This is a great chicken recipe. I don't usually eat chicken because it is always dry and there is always no taste. I love to eat chicken this way. It has great flavor and is so easy. Plan ahead because it needs to sit overnight
Ingredients:
1/2 cup lime juice
1/4 cup apple cider vinegar
6 garlic cloves, minced
2 teaspoons dried oregano
1 tablespoon dried coriander
2 teaspoons pepper
1 teaspoon salt
1 teaspoon paprika
8 large boneless skinless chicken breasts
1/4 cup vegetable oil
Directions:
1. In a large resealable plastic bag combine the first eight ingredients.
2. Add chicken to bag.
3. Seal bag and turn to coat, refrigerate 8 hours or overnight.
4. Discard marinade.
5. In a skillet, brown chicken in oil on all sides.
6. Transfer to a greased baking pan.
7. Bake uncovered at 375 for 20-25 minutes or until juices run clear.
8. ****Baking time will depend on the size of the chicken breasts. Don't overcook or they will be dry.
