Garlic-Herb Mini Flatbreads

The dough for our Test Kitchen's homemade crackers is easy to work with. And with such wonderful flavor, these are worth the time it takes to prepare them.
Ingredients:
2 cups king arthur unbleached all-purpose flour
1/3 cup shredded asiago cheese
5 tablespoons sesame seeds
1 tablespoon dried minced garlic
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon dried rosemary, crushed
2/3 cup plus 2 tablespoons water, divided
1/3 cup olive oil
1 egg white
topping:
2 tablespoons shredded asiago cheese
1 tablespoon dried minced garlic
1 tablespoon sesame seeds
1 teaspoon dried rosemary, crushed
Directions:
1. In a small bowl, combine the first seven ingredients. Gradually add 2/3 cup water and oil, tossing with a fork until dough forms a ball. Divide dough in half; roll each portion into a 12-in. x 8-in. rectangle directly onto a greased baking sheet. Pierce dough with a fork.
2. Whisk egg white and remaining water; brush over dough. Combine topping ingredients; sprinkle over the top.
3. Score dough into 2-in. squares. Bake at 400° for 15-20 minutes or until golden brown. Immediately cut along the score lines; cool on pans on wire racks. Store in an airtight container. Yield: 4 dozen.
