A family favorite for as far back as I can remember. Anytime we grilled out this was on the grill and rather it was 6 tomatoes or 36 tomatoes they always got gobbled up. Enjoy
Ingredients:
6 ripe red tomatoes
coarse salt and black pepper
3 tablespoons extra virgin olive oil
6 cloves garlic finely minced
2 ounces parmesan cheese
2 tablespoons fresh thyme leaves
Directions:
1. Cut tomatoes in half crosswise then season with salt and pepper to taste.
2. Heat oil in small skillet over medium heat.
3. Add garlic and cook until just starting to turn golden brown about 2 minutes.
4. Pour garlic and oil in heatproof bowl.
5. Set up grill for direct grilling and preheat to high.
6. When ready to grill brush and oil grate.
7. Place tomatoes cut side down on hot grate and grill until nicely browned about 5 minutes.
8. Rotate them 45 degrees after 2 minutes to create crosshatch grill marks.
9. Turn tomatoes with tongs then spoon fried garlic over tomatoes and continue grilling 5 minutes.
10. Transfer tomatoes to plates or platter then grate cheese over tomatoes and sprinkle with thyme.
