Super quick, super flavorful pasta dish. Don't cringe until you taste it, it isn't overwhelmingly feta or goat cheese tasting. The garlic butter and tomatoes really mellow this out. I love it as a quick meal for me. Not for the calorie watchers - butter makes a big difference in both taste and mouthfeel, Luscious.
Ingredients:
1 lb spaghetti
4 tablespoons butter
2 -3 garlic cloves, minced (more if you like)
3 ounces goat cheese (chevre, 1 small package)
4 ounces feta cheese, cubed
8 ounces diced tomatoes (or 1 can if fresh not available)
1/4 teaspoon red pepper flakes
salt and pepper (the feta is pretty salty, taste before seasoning)
1 tablespoon chopped parsley
2 tablespoons capers, drained
1/4 cup chopped kalamata olive
Directions:
1. Melt butter in large saute pan over medium low heat until melted.
2. In meantime, boil spaghetti until just underdone (mine takes about 8 minutes), drain (reserve some of the water, about 1/2 cup) and set aside.
3. Add garlic and saute until lightly brown, careful not to burn.
4. Add cheeses and tomatoes and red pepper and stir to combine and slightly cook the tomatoes.
5. Add cooked pasta and stir to combine.
6. Add reserved pasta water if too thick.
7. If desired, capers and or olives can be used as well for a little change (hey, it's your food, do what you like :).
8. Garnish if if desired with chopped parsley,.
