Garlic Chutney

For garlic lovers. Goes well with BBQ, and makes a great gift.
Ingredients:
2 lbs apples, peeled,cored and quartered
1 1/2 pints white vinegar
2 lbs dark brown sugar
1 lb raisins
2 heads garlic, cloves separated,peeled and chopped fine
4 ounces crystallized ginger, chopped fine
1 1/2 teaspoons dry mustard
1 teaspoon salt
1 tablespoon dried chili pepper flakes
Directions:
1. Cook apples in vinegar till soft and mushy.
2. Add remaining ingredients (adding only half the pepper flakes) and mix well.
3. Cook over moderate heat about 10 minutes.
4. Taste.
5. If spicier taste wanted, add remaining pepper flakes.
6. Cook 15 minutes more, stirring occasionally.
7. Pour into sterile jars and seal.
8. If not sealing, store in refrigerator.
9. (This keeps a long time in the refrigerator).
