Makes a great weeknight dinner.
Ingredients:
2 teaspoons crushed or minced garlic
1/4 cup olive oil
1/4 cup dry bread crumbs
1/4 cup grated parmesean cheese
4 boneless skinless chicken breast halves
Directions:
1. Preheat oven to 425 degrees.
2. Warm the olive oil and garlic to blend flavors.
3. In a separate dish,combine bread crumbs and cheese.
4. Dip chicken into olive oil and garlic then into bread crumb mixture.
5. Place in a shallow baking dish.
6. Bake for 30-35 minutes.
7. Serve with a garden salad and bread.
