“My mother gave me this microwave recipe several years ago,” writes Marla Pinson from Granbury, Texas. “It’s easy and so tasty even my kids eat their veggies with this on them!” Also try the garlic-flavored topping over bread as a yummy change of pace or substitute garlic salt for garlic powder for a bit more flavor.
Ingredients:
3 tablespoons butter, softened
1/2 teaspoon garlic powder
1/4 teaspoon dried thyme
garlic bread:
4 hoagie buns, split
1/4 cup grated parmesan cheese
vegetables:
3 cups fresh broccoli florets
3 cups fresh cauliflowerets
1 to 2 tablespoons water
1/4 cup grated parmesan cheese
Directions:
1. In a small microwave-safe bowl, combine the butter, garlic powder and thyme. Cover and microwave on high until butter is melted. Yield: 3 tablespoons.
2. For garlic bread: Brush butter topping over cut sides of buns. Place cut side down on grill. Grill, uncovered, over medium heat for 1 minute or until toasted. Sprinkle with cheese. Yield: 4 servings.
3. For vegetables: Place broccoli, cauliflower and water in a 2-qt. microwave-safe dish. Cover and microwave on high for 5-7 minutes or until crisp-tender; drain. Drizzle with butter topping; toss to coat. Sprinkle with cheese. Cook, uncovered, on high for 30 seconds or until heated through. Yield: 4 servings.
