Garlic and Chive Vinaigrette

Use to dress green leaf salads or warm new potatoes.
Ingredients:
1/8 teaspoon dijon mustard
2 tablespoons red wine vinegar
6 tablespoons light oil
1 garlic clove, peeled but left whole
salt & freshly ground black pepper
1 pinch sugar
1 tablespoon fresh chives, chopped
Directions:
1. Shake together everything but the chives.
2. Just before serving, add the chives.
