Garden Stuffed Potatoes

This garden stuffed potatoes makes a healthy and flavourful side dish as well as a nice lunch.
Ingredients:
4 large russet potatoes, scrubbed
2 tbsp butter
1 small onion, chopped
2 cups of broccoli, chopped
1/2 c ranch dressing
1 tbsp vegetable oil
2 tsp parsley, chopped
2/3 c sharp cheddar, shredded
Directions:
1. Preheat oven to 425F. Pierce potatoes and microwave on high for 10-12 minutes. Wrap in foil and bake for 10 minutes. Unwrap and slice potatoes in half. Scoop out potatoes, leaving jacket. Mash pulp. Saute onion in butter for a few minutes. Add broccoli and saute for a few minutes. Remove from heat and add salad dressing. Next add potatoes pulp. Brush potatoe jackets with oil. Spoon potatoe mixture into jacket, top with cheese and baked for 10 minutes until cheese melts. Sprinkle with salt, pepper and parsley.
