I was looking for ways to get some veggies into my toddler's all-carb diet. He loves this!
Ingredients:
1 1/2 cups self-rising flour
1/2 cup cornmeal
2 teaspoons dill
1 teaspoon rosemary
1 1/4 cups buttermilk
1 egg
2 tablespoons olive oil
1/2 cup applesauce
1 clove minced garlic
1/2 cup grated zucchini
1/4 cup diced tomato
1/4 cup grated carrot
1/2 cup chopped broccoli
1/4 cup corn
1/4 cup minced onion
1/4 cup shelled sunflower seeds
Directions:
1. Preheat oven to 350 degrees.
2. Grease a loaf pan.
3. In a large bowl, combine all dry ingredients.
4. In a separate bowl, combine buttermilk, 1 tablepoon oil, egg, applesauce.
5. Add wet ingredients and vegetables to dry ingredients.
6. Stir until blended.
7. PLace batter in loaf pan.
8. Brush with remaining olive oil and sprinkle with sunflower seeds.
9. Bake for 50-60 minutes or until pick comes out clean.
