Super healthy and super tasty garden frittata.
Ingredients:
1 whole egg
3 egg whites
1/2 cup chopped spinach
1/2 cup chopped fresh tomato
1/2 cup sliced mushrooms
1/4 teaspoon garlic
salt and pepper
1 teaspoon grated parmesan cheese
1 teaspoon salsa
Directions:
1. Spray pan with olive oil flavored cooking spray. Brown garlic. Add all ingredients and cook on medium heat until eggs are firm. Add parmesan or salsa if desired.
