a nice summer salad served hot. best if fresh veggies are used.
Ingredients:
3 tablespoons butter
1 garlic clove, pressed
1 medium onion, chopped fine
1 bell pepper, chopped
1 1/2 lbs yellow squash, thinly sliced
2 cups corn, cut from cob
2 tomatoes, diced
1 teaspoon salt
2 teaspoons basil, fresh chopped
pepper, to taste
1 pinch sugar
1/3 cup water
Directions:
1. In large skillet, melt butter and saute' the onion, bell pepper and garlic till soft.
2. add squash and cook briefly before stirring in corn, tomatoes and seasonings.
3. cook a couple more minutes and put into a buttered 3 qt casserole dish, add water.
4. bake covered for 30 minutes 350 degrees F.
5. remove cover and bake another 30 minutes.
