This is a great lunch salad either with greens or on low-carb bread.
Ingredients:
1 cup chick peas
2 hard-boiled eggs
1/8 cup scallions
1/4 cup red pepper
1 tbsp reduced fat mayonnaise
2 tbsp sweet relish
1 tsp mustard
Directions:
1. Mash eggs and beans with potato masher. Add all other ingredients and mix well. Chill for at least 2 hours to allow flavors to blend. Serve in warmed pita halves.
