Garbanzo's and Spinach

Yummy Garbanzo beans (chick peas) with a tomato sauce and baby spinach. Serve over brown rice.
Ingredients:
3 cups baby spinach, chopped
1 small onion, diced
2 tbs olive oil
2 tbs tomato paste
2 tbs ginger powder
1/2 cup water
16 oz garbanzo beans
Directions:
1. Chop the spinach and onion, set aside
2. Heat the oil over med/high heat in a large skillet.
3. add the onion and cook a few minutes until onions are translucent.
4. Add the tomato paste and water. Cook until mix forms a thick sauce. Add Ginger and stir.
5. Add Garbanzo's and heat through. Add spinach and heat until it wilts. Serve over brown rice.
